This refined culinary experience offers guests an authentic Thai set menu, where traditional recipes are elevated with innovative twists and crafted exclusively from ingredients sourced within a 100-mile radius of the resort. The new dining experience highlights the region’s vibrant local produce, from ocean-fresh seafood to hand-harvested produce, providing an authentic taste of Surat Thani’s rich culinary heritage.

Santiburi Koh Samui spans 23 acres of lush tropical gardens, shady trees, and serene lotus ponds, offering breathtaking views of one of the island’s most stunning beaches. Surf’ n’ Earth

At the heart of this exclusive set menu are the exceptional flavours of Surat Thani, artfully curated to showcase the region’s finest local ingredients. The highlight dishes include hand-harvested oysters from a local farm carefully handpicked by Chef himself, topped with an oceanic burst of sea grapes, balanced with a zesty ponzu and a fiery kick of nitro sriracha. The delicate wild-caught Samui lobster carpaccio is paired with bold Tom Yum caviar and a crunchy peanut cracker, while the light and flavourful Samui mackerel consommé is elevated by tangy star gooseberry and crispy fried dried shrimp. The wild-caught Samui red snapper, ordered from local fisherman, is perfectly complemented by a fragrant yellow curry and the rich, sustainable Surat crab sauce. Served alongside are tender Thai Wagyu beef cheeks, complemented by a smooth local squash mousse. To finish, indulge in the creamy sweetness of Koh Phangan coconut milk ice cream, made from the finest coconuts of the island's traditional farms, offering a refreshing conclusion to this culinary journey. Lady Finger bananas are from local gardens in Koh Samui. Gardeners and farmers in Koh Samui like to grow them on the mountains such as in Mae Nam Subdistrict or Na Mueang Subdistrict. Therefore, we can find this local ingredient in Koh Samui.

Sourcing from local fishermen and growers within a 100-mile radius allows Sala Thai to offer guests the freshest and most sustainable ingredients available. Each dish on the menu serves as a tribute to Southern Thailand’s rich culinary traditions and highlights the region's vibrant local produce, ensuring an authentic and flavourful dining experience.

In addition to the dining program, Santiburi Koh Samui proudly introduces the 'Beverage of 100 Miles,' featuring an enticing selection of cocktails crafted with Samui Rum from the Magic Alambic Rum Distillery, the island's only home-grown rum. This Agricole-style rum is made from 100% pure first-press sugarcane juice, resulting in a dynamic and delicate earthy flavour. The cocktail offerings include the Island Spice, a robust blend of Samui rum with fresh ginger and a sweet and sour mix; the Herbal Collins, a refreshing combination of Saneha gin, fresh basil, and ginger ale; the Full Moon Mojito, featuring rum, fresh mint, passion fruit, and lime for a tropical sweet and sour experience; and the Coco Beach, a delightful mix of Samui rum, coconut rum, banana, and coconut milk.
